Healthy High Protein Mexican Lasagna

The right ingredients can make all the difference when it comes to taste.  This is also the key factor when determining if a recipe will fit your macro goals.  In this edition of “in the kitchen” we are putting a healthy twist on a tasty recipe.  It makes 4 hearty servings as you can see from the photo.  Here’s a quick how-to video:

Start off by grabbing a medium sized pan and heating it up on the stove (medium-high heat).  Toss in one pound of 96/4 extra lean ground beef.  Toss on your spices (I used pepper, cayenne, siracha, and seasoning salt… forgive me I ran out of cumin).  Once the meat is browned, toss in one half (around 8 oz.) can of thick & chunky salsa.  Mix those 2 ingredients together in the pan.

Then, grab a baking dish (6×9).  Grease pan with 2 tablespoons of butter (YES, BUTTER.  It’s healthy and the healthier the source, the better the butter, i.e. butter from grass-feed beef).  Pre-heat oven to 350.

Grab a package of fajita style tortillas (these were from Kroger and 98% fat free).  Lay 3 across the bottom of the pan.  Then, add in 1/3 jar of fat-free refried beans and spread across pan.  Add 1/3 of your meat/salsa mixture overtop, then add fat free cheddar cheese (7 oz. package), add around 1/4 package overtop.  Then repeat 2 more times.

Slice the remaining tortilla in half and lay overtop of the pile.  You may have to tuck in the tortilla so the edges don’t hang over.  Then, add the remaining cheese on top.  Bake in oven at 350 for 20 minutes.

  • 1 lb. 96/4 Extra Lean Ground Beef
  • 8 oz. Thick and Chunky Salsa
  • 1 16oz. can Fat Free Refried Beans
  • 1 7oz. package Fat Free Cheddar Cheese
  • 1 package (10 count) 98% Fat Free Fajita Style Tortillas

Serves 4.

Macros:

  • Protein: 200 grams
  • Carbs: 280 grams
  • Fat: 48 grams
